In cooperation with the Ministry of Rural Affairs, we gave ideas on what to put on the dinner table instead of pork roast. Fish dishes were prepared with the festive season in mind. You can find baked trout marinated in beetroot inspired by the play of colours, an effective herring-beetroot salad, or as Estonians call it – kasukas, and a brightly festive smorgasbord.
